Common Name: Hoki
Scientific Name: Macruronus novaezelandiae
Other Names: Whiptail, Blue Hake (New Zealand), Blue Grenadier (Australia), Merlu a longue queue, Hoki de Nouvelle-Zelande, Merluse (France), Langschwanz-Seehecht (Germany), Nasello azzurro (Italy), Merluza azul (Spain).
Family: Merlucciidae (hakes)
Description: Average length 60-100cm. Average weight 1.5kg. Silvery on sides and belly, blue-green above. Dark fins, smooth skin, easily removed scales. Related to Hake.
Main Season: Caught all year round mainly by deepwater trawlers. Major catch from June-September during winter spawn.
Resource: Resource size very large. Managed under the NZ Quota Management System. Caught mainly by trawlers around the South Island in depths 200-800m. Also occurs around North Island and New Zealand's sub-antarctic islands. Similar species are found around South America.
Characteristics: Flesh is white and delicate, very succulent and flakes easily. Suitable for most methods of cooking.
