Scientific Name: Hoplostethus atlanticus
Other Names: Sea Perch (Australia), Hiuchidai (Japan), Beryx de Nouvelle-Zelande (France), Granatbrasch (Germany), N.Z. Redfish (Greece).
Family: Trachichthyidae ( roughies ).
Description: The average size is 30-40cm and average weight is 1.5kg. Orange body and fins; deep body, massive head with conspicuous bony ridges and cavities. Scales small and irregular in shape and pattern, lateral line scales larger than body scales. A keel of larger scales on the belly.
Main Season: Caught by trawling all year round with low season March-May and highest catch August – October.
Resource: Resource size very large.
Characteristics: Pearly white flesh, medium texture holds together well on cooking with coarse flakes. Delicate shellfish flavour. Suitable for most cooking methods.
