Scientific Name: Crassostrea gigas
Other Names: Ma-gaki (Japan), Huitre creuse, Huitre pacifique (France), Pasifische Auster (Germany), Osta Pacifica (Spain).
Family: Ostreidae (oysters)
Description: The average shell length is 80 – 100 mm; can reach 150 mm in four years. Reaches marketable size of 50 – 70 gms whole weight after 15 – 18 months.
Main Season: Harvested throughout the year except during the spawning season between December to March.
Resource: Cultivated in New Zealand.
Characteristics: Flesh lighter coloured than the rock oyster with blackish edge around mantle. Equally suitable for eating natural or cooked.
Common Packaging: (packaging may vary between vessels)
