Scientific Name: Pseudocaranx dentex
Other Names: Jackfish (NZ), Trevally, Silver Trevally, White Trevally (Australia), Shima aji (Japan), Carangue Australienne (France), Leccia stella (Italy), Hamam (Saudi Arabia).
Family: Carangidae (jacks)
Description: The average size is 30 – 50 cm, weighing up to 1.5 kg. Found around New Zealand and southern Australia with a similar species in Japan. Deep bodied. Blue-green above, some yellow on sides, silver white below. Small scales, row of scutes along rear part of body.
Main Season: Landed all year round with main catches from December to March.
Resource: Semi-pelagic. Caught mostly by trawl, purse seine and set net. A moderate resource.
Characteristics: Flesh pinkish with dark lines that may be filleted out; cooks to a light cream colour. Medium to soft texture. Suited to most methods of cooking.
