Family: Haliotidae (abalone)
Description: Paua (abalone) is a univalve shellfish. Ranges in size from 7-14cm at maturity, but can grow to a maximum of 18cm.
Main Season: Harvested all year round.
Resource: While abalone are found throughout the world, the New Zealand paua (Haliotis iris) with its spectacular blue/green iridescent shell is unique to New Zealand.
Characteristics: Farmed Abalone has a light coloured meat with firm texture.
